- Toast the bread slices.
- Spread both sides of the sandwich with the vegan mayo.
- Top with the organic veggie Parisian Ham slices and the avocado slices.
- Finish with the microgreens.
Serve with a hot bowl of soup. We like to use a good quality bread (topped with seeds) for this toast.
Season the avocado slices with salt, pepper and a splash of squeezed lemon to prevent oxydation.
