Healthy Egg “Mc Muffin” Copycat with Veggie Ham


INGREDIENTS

  • 6 english muffins, split
  • 12 slices of Organic Veggie Black Forest (Alternative Kitchen)
  • 6 eggs (may substitute for egg whites or Just egg, if desired)
  • Lettuce
  • Tomatoes, 6 thick slices
  • Mayo

  1. Cook the eggs in a greased non-stick skillet or bake them (see below tip). Don’t forget to season with salt and pepper!
  2. Toast the english muffins halves.
  3. Spread the mayo on both bread sides.
  4. Assemble your sandwich: lettuce, egg, tomato slice, veggie ham.


Make ahead Pro Tip : If you like quick breakfasts, you can prepare your sandwiches ahead and have them ready in your freezer.
Here’s how : Split open the muffins; on each one stack 2 slices of veggie ham and a baked egg. Wrap each muffin in parchment paper. For microwave reheating: if thawed, reheat 40-60 seconds at full power. If frozen, reheat 3 minutes at half power, turning over after each minute.
Baked Eggs : You can also bake the eggs in a greased jumbo muffin pan or in greased individual ramekins. Bake them in a 350F oven for 20-25 minutes.
