Kale Vegan Quesadilla


  • 4 Tortillas (here Mejicano w/olive oil)
  • 1 pack of Alternative Kitchen Organic Vegan Cheese (here our Vegan Goat Cheese)
  • Sauteed Kale (see below)

For the Sauteed Kale :

  • 1 tbsp olive oil
  • 1 pepper, in cubes
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 bunch of kale, washed and sliced
  • Salt and pepper to taste

To make the Sauteed Kale : Heat the olive oil in a large skillet. Add the peppers, spives, kale and cook for 4 minutes.
Garnish the tortillas with the vegan cheese and sauteed kale mix.
Grill the quesadilla in a panini press or in a skillet.

Serving Suggestion : serve with a “Pico de Gallo”.
