Lemony Linguini with Broccoli and Vegan Meatballs


  • 300 g linguini
  • 1 pack of vegan meatballs (Alternative Kitchen)
  • 1 tbsp olive oil
  • 1 lemon (zest and juice)
  • 1 broccoli head
  • 1 garlic clove, pressed
  • 5 mint leaves, finely chopped
  • Salt and pepper to taste

  1. Cook the pasta in salted boiling water as per package instructions. Drain and reserve 1 cup of cooking water.
  2. Blanch the broccoli florets in boiling water for 4 minutes. Drain.
  3. In a large non-stick pan heat the olive oil.
  4. Add the broccoli, garlic, cooked pasta, mint and a splash of the cooking water. Toss well.
  5. Add the vegan meatballs.
  6. Turn off the heat. Add the zest and lemon juice. Adjust the seasoning.
  7. Finish with a touch of olive oil.
