Loaded Potatoes with Charro Beans


READY IN : 30 Minutes



  • 3 medium size yellow potatoes (skin on)
  • 3 tbsp vegan butter (Earth’s Own)
  • Salt and pepper to taste
  • 1 cup Charro Beans (see recipe)
  • 3 tbsp vegan sour cream (Earth’s Own)
  • Fresh Green onions, chopped
  1. Wash the potatoes and pick them with a fork. Do not remove the skin
  2. Wrap the potatoes in aluminum foil
  3. Bake them in the oven at 375F for 40 minutes OR in your AIR FRYER at Bake 350F for 25 minutes
  4. Cut the cooked potatoes in half and top immediately with the vegan butter, salt and pepper
  5. Top with the Charro beans (1/3 cup per potato) and vegan sour cream
  6. Decorate with the fresh green onions

Cooking Tips : We love to bake our potatoes in the Air Fryer. It’s a good shortcut when you need to save time.
