Vegan Meatball Stew


INGREDIENTS

  • 3 tbsp olive oil
  • 2 onions, cubed
  • 3 cloves of garlic, pressed
  • 1 tsp sage (powder)
  • ½ tsp nutmeg (powder)
  • ½ tsp cinnamon (powder)
  • ½ tsp cloves (powder)
  • ½ c-a-c de dry mustard (powder)
  • 1 can of Jackfruit, drained (here Cha’s Organics)
  • 1 cube of vegetable stock (here GoBio, dissolved in 1 cup of water)
  • 1 cup of tomato sauce
  • Salt & pepper to taste
  • 1 pack of Veggie Meatballs (Alternative Kitchen)
  • 1 cube of vegan brown sauce (here GoBio, dissolved in 1/2 cup of water)

  1. Heat the olive oil in a large skillet. Add the onions, garlic and spices. Cook for 3-4 minutes.
  2. Add the Jackfruit and vegetable broth. Simmer for 20-25 minutes. Shred the Jackfruit pieces using 2 forks.
  3. Add the tomato sauce and brown sauce and let simmer for 10 minutes.
  4. Add the vegan meatballs and cook for 3-4 minutes.

Serving suggestion : serve with mashed potatoes.
