Vegan Meatballs Mole


  • ½ cup Mole paste (homemade or store bought)
  • 1 red onion
  • ½ cup vegetable stock
  • 1 pack of Vegan meatballs (Alternative Kitchen)
  • Toppings : Sesame seeds and fresh coriander leaves

  1. In a blender, mix the mole paste, red onion and vegetable stock
  2. Sautée the vegan meatballs in a splash of olive oil for 3 minutes until browned and crispy
  3. Add the mole sauce and let simmer for 2-3 minutes until well reheated
  4. Top with sesame seeds and fresh coriander

Serving Tips : We love to serve the Vegan Meatballs Mole with white rice, fresh avocado slices and a lime wedge. If you are looking for a full Mexican vibe, go ahead and add a thinly sliced hot red pepper touch!
