Veggie Ham Provence-Style Toast


INGREDIENTS

  • Sandwich bread loaf sliced lengthwise, toasted (here Boulangerie Ange)
  • Eggplant puree (here Baba Ganoush Fontaine Sante)
  • Organic Veggie Pepper Ham (Alternative Kitchen)
  • 1 zucchini (see below)
  • Roasted pine nuts
  • Mini tomatoes, halved
  • Micro greens (here Micro Plants Robert)

Zucchini : Using a peeler, cut into strips (lengthwise). Cook 3 minutes in boiling water and season with salt, pepper, fresh tarragon and olive oil.
