Veggie Ranchero Burrito


INGREDIENTS

  • 1 Tortilla
  • ½ cup vegan scramble (Nabati)
  • 3 slices of Alternative Kitchen Organic Veggie Ham (Bell Pepper)
  • 2 tbsp refried beans (see below cooking tips)
  • Fresh spinach

  1. In a non stick pan, cook your vegan scramble with a little olive oil at medium heat
  2. Assemble the burrito: top the tortilla with the veggie ham slices and add the vegan scramble, 2 tbsp of refried beans and the fresh spinach. Roll the burrito
  3. Serve with salsa and tostito chips


Cooking Tips : For homemade refried black beans, sautée 1 diced onion in 1 tbsp olive oil. Add 1 tsp cumin, 1 tsp oregano and a can of black beans (liquid included). Mash the beans with a potato masher and cook at medium – high for 7-8 minutes. You can use the refried black beans in nachos, burritos, wraps, fajitas or as a healthy dip with chips. They will add extra plant protein and fiber to your diet. 🙂
