- Heat the skillet to medium – high heat and add the 2 tablespoon of oil. Add in the sachet of Pataks aromatics. Stir for 1 minute
- Add the chopped onions. Cook, stirring occasionally with a wooden spoon for 2-3 minutes.
- Add the Pataks curry paste and cook for 2-3 minutes.
- Add the Pataks sauce and the coconut cream. Cook for 3-4 minutes
- Add the red lentils. Reduce to medium – low heat and simmer for 15 minutes (stir occasionally).
- Add the veggie sausages and cook for 3-4 minutes.
- Season to taste with salt and pepper.
- Serve with freshly chopped coriander leaves and steamed basmati rice.
Veggie Sausage & Lentil Masala Curry
- 5 medium carrots (cut each in 8 pieces or so)
- 1 chopped yellow onion
- 2 medium sweet potatoes (peeled & chopped in cubes aprox. the same size as the carrots)
- 2 tablespoons olive oil
- 1 pack of Patak’s Tikka Masala (we love the 3 step cooking sauce kit containing aromatics + curry paste + sauce)
- 1 cup of red lentils (wash and drain using a colander)
- 1 can of coconut cream
- 1 package (200 g) Alternative Kitchen Veggie Sausage (we decided to use the BBQ one for this recipe but any other flavor works) sliced
- Fine sea salt and freshly cracked pepper
- Topping: fresh chopped coriander leaves
- Serve with: Basmati steamed rice
